Together, they create a smooth and rounded brew with gentle lift and rich character.

What is the Mountain Water Process?

The Mountain Water Process (MWP) is a decaffeination method that uses natural mountain spring water from Pico de Orizaba in Mexico—the country’s highest mountain—to gently remove caffeine while preserving the bean’s flavour integrity.

How It Works:

  1. Green coffee beans are soaked in pure mountain water to extract caffeine and soluble flavour compounds.
  2. The water is run through carbon filters to remove caffeine.
  3. Beans are then reintroduced to the filtered, flavour-rich water to reabsorb everything except the caffeine.
